Harvest Chicken Noodle Soup

On this lousy cold, windy night before Hurricane Sandy
is suppose come onto Long Island
I thought this soup would be perfect to make.
The family loved it, and it went really nice with
some warm french bread.

Harvest Chicken Noodle Soup

Servings: 3 (1 2/3-cup) servings

4 skinless boneless chicken breast
1/2  cup sliced celery
1/2  cup chopped carrot
1/4  cup chopped onion
1/2  teaspoon dried thyme leaves
14 1/2-oz. ready-to-serve chicken broth
1/2  cup water
1 1/2 cups uncooked medium egg noodles
 ( I like to use baby shells )

Preheat oven to 450 degree
Place chicken breast on baking sheet.
Rub with olive oil and salt and pepper.
Roast chicken until done (approx 30 min).
Set aside to cool, once cooled
dice chicken into small pieces.

In large saucepan, combine all ingredients
except noodles and chicken; mix well.
Bring to a boil. Stir in noodles and chicken.
Reduce heat to low; simmer 15 to 20 minutes or until
noodles and vegetables are tender.

Candy Corn Cheesecake Mousse

Two of  my favorite desserts all in one, 
cheesecake and mousse.
A big hit with my family and I'm sure it
will be with yours too.

Candy Corn Cheesecake Mousse

1 package (8 oz.) cream cheese

1/2 cup powdered sugar

1/4 cup milk or cream

1 teaspoon vanilla

1 small container (8 oz.) Cool Whip, thawed

orange and yellow food color

candy corn (for garnish)

Directions ~

Beat cream cheese in the bowl of an electric mixer until fully smooth.  
Slowly add powdered sugar, then milk (or cream).  
Add vanilla.  Continue mixing.  Beat about 1 minute on 
medium to medium-high speed.  Fold cool whip into 
cream cheese mixture, and stir until fully combined.

Scoop about 1/3 of the Cheesecake Mousse into a bowl, 
and color orange. 
 Color another third of the mixture yellow.  
Leave the remaining third white.
  One color at a time (starting with yellow), 
scoop mixture into a piping bag
 or large ziplock bag, and squeeze a 
layer of the Cheesecake Mousse into 
small dessert dishes of your choice.  
Repeat with orange and then white Mousse.

Refrigerate 30 minutes (or up to 1 day) before serving.  
Garnish with candy corn if desired.

Recipe yields 4 moderate servings or 6-8 mini servings.

Pumpkin Dump Cake

Well I made my first " Dump Cake " and I just have to say
it is so delish and was so very easy to make.
If you like pumpkin pie with a little extra something
then I think you will love this recipe.

1 can of pumpkin {15 oz.}
1 can of evaporated milk
1 cup of brown sugar {packed}
3 eggs
2 dashes cinnamon
2 dashes nutmeg
1 box white cake mix
1/2 cup butter

*Preheat oven to 350 degrees*

 Mix together one can pumpkin, one can evaporated milk, 1 cup brown sugar, 
3 eggs, a dash or two of cinnamon and nutmeg. Stir until smooth.

Pour into a greased 9 x 13 pan.

 Pour box of cake mix evenly on top of pumpkin mixture, don't mix.

Add any toppings that you want. I used crushed graham crackers and chopped walnuts. 

 Melt one cube of butter and pour evenly over the top of the cake.

Bake at 350 degrees for 40-45 minutes.

Serve as is or with whipped topping or Icecream.

Pumpkin Bread with a Penuche Glaze

Fall is the time of the year when we start to think of some of our
favorite warm and comforting foods. After a summer of fresh
fruit and vegetables we are turning to the comfort of soups, stews,
other hot meals, apples and pumpkins.

Pumpkin is not just for pumpkin pie. There are so many delish
recipes that it is hard to choose just one, so I am gonna start
with pumpkin bread.

Remember to keep your pumpkin seeds for a fun fall
treat of roasted pumpkin seeds.


1 1/2 cup sugar
2 eggs
1 cup pumpkin (1/2 can)
1/2 cup vegetable oil
1 2/3 cup flour
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla
dash of salt
1 teaspoon baking soda
1/3 cup warm water

Preheat oven to 350. Combine sugar, pumpkin, eggs and oil. Mix well.
Add vanilla, flour, cinnamon, salt, and nutmeg. Mix until fully blended.
Mix the baking soda and warm water in a separate bowl.
Add it to the pumpkin mixture a little at a time.
Pour into a greased loaf pan.
Bake at 350 for one hour or until cooked through.
When it is fresh from the oven, make the glaze.

Penuche Glaze:

1 1/2 tablespoons butter
1/4 cup brown sugar
2 tablespoons milk or cream
3/4 cup powdered sugar (add more if you like it thicker or sweeter
less if you like it thinner).

In a small saucepan, melt the butter and the brown sugar over medium
 heat until it boils. Let it boil for about a minute or until it is thick.
Whisk in the milk or cream, then the powdered sugar
whisk in very slow to avoid lumps.
Use tablespoon of milk or cream if needed to thin
(we like it thick as you can see ).

Drizzle on bread.
